The grape harvest is handled manually when it arrives in the cellar and we carry out a process of selective sorting table. After being de-stemmed completely, grapes go into the fermentation vats where they undergo a traditional vinification. The red harvest is vinified in stainless steel vats and big oak vats. Whilst, the white grapes are vinified in new oak barrels and thermoregulated stainless steel vats.

All the grape varieties are vinified separately, each having its own aromas, character to a cuvée. So, our main grape varieties bring:
One of the main grape varieties and caracterizes Rhône Valley’s wines. It makes wines with a strong alcoholic content and strong flavours of raspberry, pepper and hay notes.
Another grape variety characteristic of Septentrionales and Meridionales Rhône Valley.
This most ancient grape variety is very present in the Rhône Valley. It gives full-bodied and deep wines, with notes of red fruit and liquorice.
Strong grape variety, it produce quite full-bodied wines, with a low acidity and a long and round finish.
Southern grape variety, which is used for muscats, sparkling, still wines. It makes wines with a strong alcoholic content, with peach and apricot flavors.
Associated with other grape varieties, Roussanne brings rich, greedy wines, with strong flavors of honeysuckle, honey and peony.
After the fermentation, comes the important ageing process… which by rigourous attention allows great wines to be created. This nectar is bottled at his optimum.
